This rare tea only occurs when the temperature changes from 80 degrees to 20 degrees then back to 80 degrees in a short amount of time. This creates the outrageous buttery shortbread component to the tea that’s the ice-wine of the tea world. 10

Emperor’s Gyokuro
Known as jade dew, this is the finest non-ceremonial tea produced in Japan. This tea is grown in the Uji District of Honshu near Kyoto and picked from old bushes shaded to reduce the effects of photosynthesis. 8
